Creamy Poblano Corn Chowder with Potatoes

This Creamy Poblano Corn Chowder puts a flavorful Mexican-inspired twist on classic corn chowder. It combines sweet corn, mild poblano peppers, tender potatoes, lime juice, and salty cotija cheese in a rich and creamy soup.

The combination of poblano peppers, lime, and cotija cheese gives this hearty chowder a bright, savory flavor that makes it perfect for transitioning from late summer into chilly fall and winter evenings.

Ingredients & Substitutions

Poblano Pepper: Mild poblano peppers are the star of this chowder. They add a delicious roasted pepper flavor without making the soup overly spicy.

Frozen Corn: Frozen corn works especially well because it keeps its texture and adds a little bite to the soup. Fresh corn is also a great option. Canned corn is best avoided because it can become too soft.

Yukon Gold Potatoes: Yukon Gold potatoes are ideal for chowder and don’t need to be peeled, making preparation easier. If using russet potatoes, peel them before dicing.

Onion & Red Bell Pepper: These vegetables add natural sweetness and savory flavor while complementing the poblano peppers.

All-Purpose Flour: Flour helps thicken the chowder and gives it a creamy consistency. For a gluten-free alternative, use an equal amount of cornstarch.

Butter: Butter adds richness to the soup. Olive oil or another neutral oil can be used instead if needed.

Garlic: Fresh garlic adds extra savory flavor. If you don’t have fresh garlic, you can substitute about ½ teaspoon of garlic powder.

How to Make Poblano Corn Chowder

Step 1 | Cook the Vegetables

Melt the butter in a large pot over medium-high heat. Add the onion, poblano peppers, red bell pepper, and garlic. Cook for about 6–7 minutes, stirring occasionally, until the vegetables become tender and fragrant.

Step 2 | Thicken the Base

Sprinkle the flour over the cooked vegetables. Stir thoroughly to coat everything with the flour and cook it briefly to help form the base of the chowder.

Step 3 | Simmer the Chowder

Pour in the chicken broth, then add the diced potatoes, frozen corn, and salt. Increase the heat and bring the mixture to a boil. Once it starts boiling, reduce the heat and let the chowder simmer for about 15 minutes, or until the potatoes are fork-tender.

Step 4 | Blend for Creaminess

Carefully transfer about 2 cups of the soup to a blender and allow it to cool slightly before blending. Purée until smooth, then pour it back into the pot.

Stir in the heavy cream and lime juice until everything is well combined. Blending a portion of the soup creates a naturally thicker and creamier texture while leaving plenty of corn, potatoes, and vegetables intact.

Step 5 | Serve

Ladle the hot chowder into bowls and finish each serving with crumbled cotija cheese, fresh cilantro, and an extra squeeze of lime juice.

Tips & Notes

Blending Tip: Be careful when blending hot soup. Allow it to cool slightly and avoid filling the blender more than about one-quarter full. Keep the lid slightly open so steam can escape, and hold it securely with a kitchen towel while blending.

Immersion Blender: An immersion blender makes the process even easier. Blend the soup directly in the pot until you reach your preferred consistency.

Variations

  • Spicy Kick: Add a diced jalapeño along with the poblano and bell peppers for extra heat. You can also finish the chowder with red pepper flakes or your favorite hot sauce.
