Ingredients & Substitutions

- Olive Oil: Use olive oil to cook the ground turkey and crisp the quesadillas. Butter or a neutral oil can also be used.
- Ground Turkey: Use 94% lean ground turkey instead of the ultra-lean version. The extra fat helps keep the meat tender and flavorful.
- Onion: White onion gives a mild, slightly sweet flavor, while red onion can be used for a sharper taste.
- Red Bell Pepper: This adds sweetness and color to the quesadillas. Orange, yellow, or green peppers work well too.
- Canned Black Beans: Use drained and rinsed black beans. Pinto beans, kidney beans, or refried beans can also be used.
- Canned Corn: Corn adds sweetness and crunch. Fresh or frozen corn can be used as well.
- Ground Turkey Quesadilla Seasoning: Cumin, chili powder, paprika, and garlic powder create bold flavor. Store-bought taco or fajita seasoning can also be used.
- Tomato Paste: A small amount adds rich, savory flavor and brings the filling together.
- Cheese: Oaxaca, Monterey Jack, or a Mexican cheese blend are great choices because they melt beautifully.
- Tortillas: Flour tortillas work well, but corn tortillas can also be used. Warm them first so they are flexible and do not crack.
