Tex Mex Turkey Scramble Meal Prep is a delicious and satisfying way to start your morning. It combines smoky chipotle ground turkey, crispy potatoes, fluffy eggs, melty cheddar cheese, and your favorite salsa for a flavorful breakfast.

Ingredients & Substitutions

Potatoes O’Brien – I use frozen Potatoes O’Brien because they’re convenient and add plenty of flavor. If you don’t have them on hand, frozen hash browns or diced potatoes work just as well.

Ground Turkey – Ground turkey is a lean and versatile protein that’s perfect for a wholesome Tex-Mex breakfast. You can easily substitute ground beef or chicken based on your preference. It absorbs the seasonings beautifully, keeping the dish flavorful and juicy.

Turkey Seasoning – A simple combination of dried oregano, chipotle chili powder, garlic powder, and salt gives the turkey a delicious Tex-Mex flavor. Adjust the amount of chipotle chili powder depending on how spicy you like it, or add red pepper flakes for an extra kick.

Eggs – Feel free to add more eggs or use only egg whites if you want to increase the protein while keeping the dish lighter.

Cheddar Cheese – Sharp cheddar melts beautifully and adds a rich, creamy finish. Monterey Jack or a Mexican cheese blend are also great alternatives.

Salsa or Hot Sauce – While optional, salsa or hot sauce adds a fresh, spicy boost that pairs perfectly with the other flavors.

Tips

  • Avoid Overcooking the Eggs: One of the most common mistakes is cooking the eggs for too long, which can make them rubbery. To prevent this, take the skillet off the heat just before the eggs are completely set. They will continue cooking slightly from the residual heat.
  • Spice Level: If you prefer a milder flavor, use just ½ teaspoon of chipotle chili powder. For a completely non-spicy option, you can substitute regular chili powder instead.
