This easy one-skillet dinner combines savory chicken sausage, colorful vegetables, tender rice, and melted cheddar cheese for a comforting meal the whole family can enjoy.

Ingredients

  • 1 tablespoon olive oil
  • 12 oz cooked chicken sausage, sliced
  • ½ medium yellow onion, diced
  • 1 red bell pepper, diced
  • 2 small carrots, sliced
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup uncooked long-grain white rice
  • 1 cup raw broccoli florets
  • 1 teaspoon salt
  • ½ cup milk
  • 1 cup shredded mild cheddar cheese
  • ¼ teaspoon red pepper flakes, optional

Instructions

  • Warm the olive oil in a large skillet over medium heat.
  • Optional: Add the sliced cooked sausage and sauté for about 6 minutes, until lightly browned. Transfer it to a plate while leaving the oil in the skillet.
  • Add the diced onion, bell pepper, carrots, and garlic. Cook for around 5 minutes, stirring occasionally, until the vegetables begin to soften.
