How to Make Cowboy Soup

1. Brown the Beef: Add the ground beef and spices to a large Dutch oven. Cook over medium-high heat, breaking up the meat as it browns.
2. Add the Remaining Ingredients: Add the vegetables, beans, tomatoes, potatoes, and beef broth. Increase the heat and bring the soup to a boil.
3. Simmer: Reduce the heat to low, cover, and simmer for about 20 minutes, or until the potatoes are tender.
4. Season: Taste the soup and add salt and pepper as needed.
Substitutions
Beans: Ranch beans can be difficult to find in some areas. Seasoned chili beans are a great alternative. If neither is available, use canned pinto beans or black beans.
Ro-Tel: Ro-Tel is diced tomatoes with green chilies and comes in different spice levels. For a milder soup, substitute it with a can of plain diced tomatoes.
Meat: Ground beef can easily be replaced with ground chicken, turkey, or pork. You can also use sliced smoked sausage. If using sausage, brown it in about 1 tablespoon of olive oil before adding the remaining ingredients.

Tips & Tricks
