These easy 30-minute Ground Beef Fajitas combine spicy chipotle-seasoned ground beef with plenty of roasted bell peppers and onions. Once you try them, you may never look at regular tacos the same way again.

In an effort to add more vegetables to dinner, I paired seasoned ground beef with two favorites: colorful bell peppers and onions. Whether you call them fajitas or tacos with peppers and onions, one thing is certain—they’re incredibly flavorful and satisfying.

The best part is that this meal comes together in just 30 minutes, making it an excellent option for a quick and easy weeknight dinner.

For the beef and vegetables, I use a simple blend of cumin, chipotle chili powder, salt, and garlic powder. The combination gives everything a smoky, spicy flavor that works perfectly with the beef and roasted vegetables.

TIPS:

This recipe is easy to prepare, but there’s one important trick for getting the best flavor from the ground beef: let it develop a deep brown color. Cook the meat over medium-high heat and avoid stirring it constantly. Giving it some time to sit against the hot pan helps create those delicious browned bits that add extra depth and flavor.

OTHER VARIATIONS:

  • Chili Powder: If chipotle chili powder isn’t available, regular chili powder makes an easy substitute. Chipotle powder has a smokier flavor and slightly more heat, but regular chili powder still works well in this recipe.
  • Spicy Guacamole: For a simple topping, mash an avocado with a little salt. For more flavor, mix in a splash of fresh lime juice and a pinch of red pepper flakes. The creamy, spicy guacamole pairs especially well with the smoky beef and vegetables.
