This Southwest-inspired chicken melt is one of my favorite sandwiches because all the ingredients work so well together. The recipe uses seasoned shredded chicken, which is easy to prepare and takes about 15 minutes. You can even make the chicken a day ahead to save time on busy days. Although the chicken has a little heat on its own, the cheddar cheese, onion, and tomato balance the smoky chipotle flavor perfectly once everything is combined in the sandwich.

TRICKY BITS

While cooking the chicken, you may notice that some of the spices begin to darken or lightly burn in the pan. This is completely fine as long as the chicken itself is not burning. If the pan becomes too dry, simply add a little more olive oil. The toasted spices can actually add a delicious blackened, Cajun-style flavor without making the chicken taste burnt.

This Chipotle Chicken Melt is on another level. Every bite is filled with smoky chipotle chicken and oozing cheddar cheese.

Ingredients

  • 1½ teaspoons chipotle chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • ½ teaspoon chili powder
  • ¼ teaspoon black pepper
  • 1 pound chicken breast cutlets
  • 1 tablespoon olive oil, plus more for brushing
  • 8 slices of bread
  • 4 tablespoons mayonnaise
  • 1 cup shredded cheddar cheese
  • Tomato slices
  • Thinly sliced red onion

Instructions

To Make Chipotle Chicken:

  1. In a small bowl, combine the chipotle chili powder, cumin, salt, chili powder, and black pepper. Rub the spice mixture evenly over both sides of the chicken breast cutlets.
  2. Heat the olive oil in a large skillet over medium heat. Once the oil starts to shimmer, add the chicken breast without overcrowding the pan. Work in batches if needed. Cook for 5–7 minutes per side, or until the internal temperature reaches 165°F.
  3. Let the chicken cool for a few minutes, then slice it into ½–¼-inch strips.

To Assemble the Sandwich:

  1. Brush olive oil on one side of each bread slice and spread about ½ tablespoon of mayonnaise on the other side.
  2. Take four slices of bread and add 2 tablespoons of cheddar cheese, sliced chicken, tomatoes, and red onion to the mayonnaise side. Top with more cheddar cheese.
  3. Place another slice of bread on top, with the mayonnaise side facing down and the olive-oil side facing up.
  4. Heat a large skillet over medium-low heat and place the sandwiches in the skillet. Cook for 4–7 minutes, or until the bread is toasted. Flip the sandwiches and cook the other side until golden and the cheese is melted. Serve immediately.

Notes

You can prepare the chicken in advance and store it in the refrigerator for up to 2 days before making the sandwiches.
